Food for thought

Literally ... a post on food ... (I zone out on Friday nights, so I'm happy to continue with my non-thinking post theme that I have going).

Trying to spice up the variety with what I feed the kids, and therefore myself. Kara is in a great phase where she'll try all sorts of new things, to varying degrees of success of course. Sophie occasionally surprises me, but she's not yet overly adventurous. Having said that, the sheer amount of food they can consume sometimes is incredible! I have NEVER had any trouble with getting food in their mouths (possibly explaining their continuance in the 90-95th percentile height and weight range).

OK, so on the menu this week:

Started out with those greek lamb kebabs I made ... still raving about those!

(Spicy) peanut tofu/veggie curry on rice ... I left out the red curry paste for the girls (but not mine!). Not a huge hit at all. I think Kara would have enjoyed the flavors if she actualy gave it a chance (it was heavy on the peanut butter afterall) but the texture and look put her off from the start. Plus I added zuchini (one veggie she has never taken to) and eggplant (which just looked gross). Sophie ... way too bizarre looking for her to even attempt! I'll try back in 6 months with this one.

Also, and I guess many kids are the same, they definitely seem to like their food separated on the plate, and not mixed together. Then again, I do too (unless it's a curry, noodles, pasta or caserole) and I eat most things separately too. Lance is a mixer. Didn't you all want to know that!

Scrambled eggs with vegemite toast ... this is a staple and always is easy for gym nights. It took a while for Sophie to eat all sorts of egg dishes - she would happily eat the white part but not the green (she's a little color blind I fear) part. But she loves most egg variations now. And being the pseudo Aussies that they are, vegemite has always, always been a favorite!

Leek & potato soup, with extra goodies inside (that you ended up not being able to taste, I was bummed) ... both loved it. Soup is typically a winner with them.

Fish (coconut encrusted) 'n Chips (sweet potato wedges) with other vegies (beans, carrots, broccoli I think) ... Kara demolished almost everything, and it was an enormous serving that I didn't even finish ... Sophie ate some fish at least but she's not a huge fan yet of salmon, tuna, fish. I'll try this again but I'll try to not overcook the fish this time.

And since I try to do as little as possible on Fridays, tonight's creation was easy homemade Mac 'n Cheese with tuna and black beans. Considering Sophie ate a banana and some cheese tortilla thing just before dinner I am surprised she polished off her plate.

Oh, and they typically have fruit for desert everynight.

No idea why I choose to cook creations during the week when I only have a 1.5-hour window from when we all get home to when they are rubbing their eyes, and then throw together "whatever" on the weekends!

I bet I feed them toasted cheese sandwiches all next week!

I really need to get mine started on some sort of a chicken & rice casserole. Once I find a recipe I like, I'm going to make it and freeze it into 10 small portions and give it to them every other day as a before dinner snack. I'm hoping it will wear them down and they'll try it !!!

Right now David eats cheese pizza, mac and cheese, grill cheese and most fruits and vegetables. I try everything to find something else he likes to no avail. Because I won't cook two meals some nights he only eats apple and peas. I love your recipes. I will certainly add a few to our menus.
